Cinnamon Drop Biscuits
Recipe from Robert Abbot, The Housekeeper's Valuable Present (1790). A published guide to home confectionaries for the accomplished housewife. The publication of recipe books and advice manuals were incredibly popular during the eighteenth century for the average middle class housewife. They detailed how people should lead their lives as well as providing a wealth of exotic recipes appropriate the middle and upper classes.
Ingredients:
100g of Ground Almonds
200g of Caster Sugar
2 Egg Whites
1 tsp of Cinnamon
Equipment:
Mixing Bowl
Electric or Hand Whisk
Metal Spoon
Baking Tray

Cook Time: 1 hour and 30 minutes

Pre heat the oven to 120°c/Fan and line baking tray with greaseproof paper

In a mixing bowl, whisk together the egg whites and caster sugar into stiff peaks

Fold in the almonds and cinnamon. Do not collapse the whisked whites.

Spoon the mixture onto the baking tray in small drops

Bake them for 1 hour and half at the low heat.
