'To Make Iron Cake'

Recipe From Hannah Hickes Recipe Book from 1709.

 

A handwritten personal manuscript recipe book was a common occurrence in a home during the eighteenth  century. Most middle class women owned and continuously added to their personal recipe book, staying up to date with the newest of ingredients and recipes. It was common to share ideas and recipes with their peers as well as copy recipes from the newly published domestic manuals. Almost all personal recipe books include similar recipes. Just like today, women wanted to follow the newest trends in fashion, including what to eat.

Ms.2834 Hannah Hickes Recipe Book

Ingredients

150g of Plain Flour

150g of Caster Sugar

125g of Unsalted Butter

2 Eggs

1 tsp of Cinnamon 

1 tbsp of Rose Water

Equipment: 

Mixing Bowl 

Wooden Spoon

8” Cake Tin

Tablespoon

Teaspoon

Prep Time: 15 minutes                    Serves: 4                                Ability: Easy 

Cook Time: 20-30 minutes 

Method​

  1. Preheat the oven to 190°c/Fan 180°c/Gas 5 and grease the loaf tin.

  2. Work the sugar and butter into a cream 

  3. Once mixed together, add both yolks and half the egg whites,  flour, cinnamon and rose water and beat well together until a smooth creamy mixture 

  4. Spoon the mixture into the loaf tin and bake for 20-30 mins or until the cake springs back when touched.
