'To Make Common Biscuits'

Recipe From Lucy Cully's Recipe Book dated from the eighteenth century.

 

This recipe for common biscuits is featured in most personal recipes of the time. Rose water and coriander seeds are the one of most popular spices that were continuously added to sweet treats around the eighteenth century dinner table.

MS.1974 Lucy Culley Recipe Book

Ingredients: 

100g of Plain Flour 

100g of Caster Sugar 

2 Eggs 

1 tsp of Rose Water 

1 tsp of Coriander Seeds

Equipment: 

Mixing Bowl 

Baking Tray

Wooden Spoon 

Sieve

Prep Time: 15 minutes                    Serves: 4                                Ability: Easy 

Cook Time: 30 minutes

Method

  1. Preheat the oven to 190°c/Fan 180°c/Gas 5 and line the baking tray with greaseproof paper. 

  2. In a large mixing bowl, add sugar and sift in the plain flour.

  3. Once you have separated the eggs, add both yolks and half the whites to the mixture. Beat well until it appears like a paste. 

  4. Add the rose water and coriander seeds to the mixture. 

  5. Beat together until a runny consistency. Spoon mixture evenly spaced on the lined baking tray. 

  6. Bake for approximately 20 minutes until they form a skin and appear golden brown in colour.
