'To Make Good Cocoa'

Recipe from an English Recipe Book dated between 1820-1876. Compare this to the Aztec Hot Chocolate recipe. Note the much simpler sweet drink, without the additions of strong spices favoured in Meso-America. The drink altered over 400 years to appeal to the English diet.

Ingredients: 

75 grams of 100% cocoa liquor buttons or the highest percentage chocolate bar available (75-99% preferably)

900 ml of water 

Equipment: ​

Wooden Spoon 

Saucepan 

Tea Cup

Prep Time: 5 minutes                      Serves: 4                                Ability: Easy 

Cook Time: 60 minutes

Method

  1.  In a large saucepan, add the water and cocoa liquor buttons. 

  2. Simmer at a medium to low heat for 45 minutes to an hour. 

  3. Serve in a cup as a hot chocolate drink
